How to treat the moisture content for wood

Hi all,
I had a house to refinish but the process got delayed because I was out of town and no one was there for me to trust with the house. This happened last winter. The house was left unattended and the heater wasn't turned on. The entire floor got had cracks in it. The outer part of the wood developed some kind of scars on the top and varnish was ruined. Very recently only I had the chance to do the flooring. Enquired with the company that did wood flooring in Muskoka. They said prior to installation, remember to acclimate the wood in the area where it will be installed. How to ensure your wood flooring is within an acceptable range of moisture content with the wood subfloor?
